I cannot get Adele’s song “Rolling in the Deep” out of my head!  I have watched the music video over and over, I just think it is so beautiful and poetic.  Girlfriend has some PIPES.

I had the best time in Dallas this weekend with my friends.  It was such a good time of talking and eating and working together on stuff for Asher’s 1st birthday party, which was fabulous, by the way.  We are all in such different places in life right now, more so than ever before.  I guess that is what happens as you get older and transition into your various life phases, whatever and wherever they may be.  It’s funny, this whole growing up thing.  I’ve come to the conclusion that I’m just not ready for it yet.

A conversation between husband and wife last night:

Andrew: I’m so glad you stopped buying that weird peanut butter with all the stuff in it.
Heather: You’re welcome.  Someday maybe for my birthday or Christmas I want to get a food processor, then I can make my own peanut butter!
Andrew (suppressing a smirk): Whoooa, then are you going to start worshiping the sun?  Maybe start going to herb festivals and wearing kilts?
Heather: Jerk.

Isn’t he just so funny and cute?  Pah.  Speaking of peanut butter, I am making some super delicious chocolate peanut butter bars that I LOVE, no matter what Mr. Andrew thinks.  He doesn’t like them because they have whole wheat flour in them.  Don’t get me wrong, he likes healthy things, just not healthified-things-that-should-be-unhealthy, like desserts.  I can understand that.  I’ll post the recipe below, they really are delicious.  I’ll eat one or two right out of the oven, then cut & wrap them individually and freeze them.  Then when I need a chocolatey snack, I unwrap one and microwave it for 25 seconds and YUUUMMM.

Also, I am really wanting to exercise tonight, but here is the problem.  I have gas.  I have eaten some really fibrous foods in the past 24ish hours (oatmeal with flax seed, a ton of steamed broccoli, double fiber tomato basil soup) and it has got my gaseous regions all in a tizzy.  Oh dear me.  I better just do a workout dvd here rather than go to the gym, just for the sake of the people I would come into contact with.   You’re welcome, everyone.

Dark Chocolate Peanut Butter Bars (adapted from

3 tablespoons softened butter
1/3 cup sugar
1/2 cup brown sugar
1 egg
1/3 cup peanut butter
1/2 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder
1/4 cup flour
1/2 cup whole wheat flour
2 tablespoons milled flax seed
1 cup whole oats
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dark chocolate chips (semi-sweet)
1/4 cup walnuts or almonds (totally optional)

Preheat oven to 350 degrees. In a large mixing bowl, beat butter and sugars on medium speed until creamy, 4-5 minutes. Add egg, vanilla and peanut butter. Beat until combined. Add cocoa powder and beat on low speed.

In a separate bowl, combine flour, wheat flour, flax seed, oats, baking soda and salt. Mix together. Combine dry ingredients into wet ingredients and stir until moistened. You will probably need to use your hands to get it all combined. Add chocolate chips and combine. Pour (more like dump) mixture into a greased 8 inch square baking dish. Bake for 20 minutes or until top is firm. Serve immediately, or cut into bars and store in the pantry, or wrap them up and freeze them for later on.
