greek yogurt chocolate chip muffins

Yesterday morning these two weirdos came over for breakfast and scintillating conversation, otherwise known as Leap Frog educational cartoons on Netflix.

I made us some muffins.  I warmed up a couple in the microwave this morning and am enjoying them now with a hot-n-creamy cup of Friday morning coffee.  Because we all know that coffee tastes better on Friday, duh.  Parker won’t be up for another fifteen minutes, so I thought I’d pop in and share the recipe.  Make them this weekend, they are yummy.

Greek Yogurt Chocolate Chip Muffins 
-makes a dozen-

1 1/2 c. flour
2/3 c. sugar
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 egg
1 c. plain Greek yogurt (I use one container of Chobani, which is a tad less than 1 full cup)
5 Tbsp butter, melted
1 tsp vanilla
1 c. chocolate chips

Preheat oven to 350°.
Grease muffin pan with cooking spray or line with liners.
Mix dry stuff in a bowl.
Mix wet stuff in a different bowl.
Add wet to dry and mix.
Stir in chocolate chips.
Divide amongst the muffin holes.
Bake for 15 minutes.
Enjoy!
