This is one of those rare weeks when the stars align and I do very domestic things like make a big batch of bacon and a pot of quinoa to eat on all week in various ways.  For me, that usually means salads.  For Andrew, it means BLTs.  I do the bacon in the oven at 400° for about 20 minutes on a foil-lined pan – less mess, less stress.

I love quinoa.  It’s like brown rice and oatmeal got together and made a baby, tastewise and texturewise.  It’s got a ton of protein too, and you can manipulate it into all sorts of different things.

I’ve had the same salad for lunch two days in a row, and will probably have it again today.  It has good fat (avocado), bad fat (bacon), some other fat (cheese), and is just really delish.  Basically it should be called The Salad For Fatties.  You can’t be good all the time, I mean come on.  Bacon rules.

Put the following on your plate & then eat it:

A bunch of spinach
Half an avocado
2 slices bacon, cooked & crumbled
1/4 cup cooked quinoa
1 oz goat cheese, crumbled
Your favorite Balsamic Vinaigrette
Sea salt & pepper
